Our team? Think less “corporate headshots,” more “group chat that somehow runs a bar.” We’re a lively mix of charm, sass, and dangerously good taste, here to hype your outfit, boost your mood, and pour something you’ll actually remember for all the right reasons.
We don’t do stiff service. We do inside jokes, generous pours, and the kind of energy that turns “just one drink” into “okay, maybe a couple more”… right up until it’s hugs, dramatic goodbyes, and a heartfelt “love you, bye” at closing time.
Come for the cocktails, stay because one of us has emotionally adopted you.
One of the familiar faces behind Love You, Bye, she’s already a well known name around town thanks to her café Wolfpack, where the coffee’s strong, the standards are high, and yes, she absolutely notices if you don’t finish your cup.
That same energy follows her here. A firm believer that no good drink should be left behind, she brings a slightly unhinged level of commitment to “just one more sip.” It’s not excess, it’s principle. Waste not, want not, especially when it’s something delicious.
Equal parts polished and playful, she keeps things running smoothly while quietly making sure glasses are emptied, vibes are high, and no cocktail is abandoned without a proper goodbye.
India De Silva
Abby runs on two things: espresso martinis and unapologetic sass, both served strong, with no intention of watering either down.
With a well-documented love affair with coffee-fuelled cocktails, she firmly believes an espresso martini isn’t just a drink, it’s a personality trait. Expect high standards, quick wit, and the kind of side-eye that keeps everyone on their toes (in the best possible way).
She brings the spark, the chaos, and just enough mischief to keep things interesting, making sure the bar stays bold, the energy stays high, and every night has at least one round that probably shouldn’t have happened… but absolutely did.
Abby Booth
Dawn, our General Manager, arrives with a reputation that very much precedes her, most recently lighting up The Red Deer in Horsham and leaving behind a trail of regulars who still aren’t over it.
Known (and loved) for a personality that simply does not do “small,” Dawn brings big energy, big laughs, and an even bigger ability to turn a room into her room within about 30 seconds. She’s the kind of GM who knows your name, your drink, and probably your life story by the end of the night, whether you planned to share it or not.
Equal parts chaos coordinator and crowd favourite, she keeps everything running like clockwork while somehow being at the centre of the party. If you hear laughter, there’s a strong chance Dawn’s involved, and if you don’t, give it a minute.
Dawn Hinton
Sally G, better known around here as Saucy Sally, is living proof that you don’t slow down, you just turn the volume up. She’s serving sass, and style in equal measure, usually with a generous glass of wine never too far from reach.
Affectionately known as George’s mum, she’s rarely seen without her tiny (but mighty) Shih Tzu sidekick, who’s just as likely to be causing a scene as she is. Between the two of them, there’s always a bit of drama, and a lot of laughs.
Sharp-tongued, big-hearted, and completely unapologetic, Sally’s the kind of woman who says exactly what everyone else is thinking… just louder and with better timing. Spend five minutes with her and you’ll understand why she’s a legend, spend ten, and you’ll probably be buying her next glass
